The First Time I Cooked Bun Cha for My Foreign Friend

Last weekend, my friend Tom, who had never tried Vietnamese food before visiting Hanoi, asked me to cook bún chả for him. I have eaten this dish my whole life, but I had never actually cooked it myself.

I called my mother, who has been making bún chả since she was a teenager, and asked for her recipe. She laughed and told me that the sauce, which needs the perfect balance of fish sauce, sugar, vinegar, and garlic, is the part most beginners get wrong.

While grilling the pork, which kept burning slightly on the edges, I began to panic a little. If the meat turns out too dry, I thought, Tom will think all Vietnamese food tastes like this. Thankfully, the sauce I had prepared earlier saved the dish completely.

When Tom finally tasted it, his eyes widened, and he said it was one of the best meals he has had in Vietnam so far. I have never felt so proud of a home-cooked meal in my entire life.

Now, whenever friends visit from abroad, I always suggest bún chả first — not because it’s easy to make, but because sharing it with someone who has never tasted it feels like sharing a small piece of home.
