Making Spring Rolls with My Mom

Last Sunday, my mom taught me how to make chả giò, Vietnamese fried spring rolls. Our family often eats them at Tết and on special days, but I never helped to make them before.

First, we went to the market to buy the ingredients: minced pork, shrimp, carrots, wood ear mushrooms, glass noodles, and rice paper. My mom chose the freshest shrimp she could find.

At home, I washed the vegetables while my mom was chopping the carrots and mushrooms. Then we mixed everything in a big bowl with an egg, some salt, and pepper.

Next came the hardest part: rolling. My mom put a spoonful of the filling on a sheet of rice paper and rolled it tightly. She did it very quickly. My first roll was too loose, and the filling fell out. My second one was better, but it was much fatter than hers. We both laughed.

"Don't worry," Mom said. "You should roll slowly and carefully. Practice makes perfect."

After an hour, we had forty spring rolls. My mom fried them in hot oil until they were golden and crispy. The kitchen smelled wonderful.

At dinner, we ate the spring rolls with fresh lettuce, herbs, and fish sauce. My dad said my rolls were the tastiest, even though they looked a little funny.

Cooking with my mom was more fun than I expected. Next month, I want to learn how to make phở.
